SPAM fried rice


What is there not to love about SPAM? You can have it straight from the can, or bake thin slices of it in the oven till it turns crisp, fry slices of it and then coat it with egg (which is what I grew up eating at my maternal grandma's place, and also a regular dish at my late MIL's table). 

Or you can make SPAM fried rice! This is a easy one dish meal to prepare. If you are pressed for time, you can cook it and then keep it warm in the rice cooker till it's ready to be served. 

SPAM fried rice (serves 6 or 4 large appetites)

Ingredients:
3 cups(420g) of rice to be cooked with slightly less than 3 cups (400g) of water (cooled)
1 can of SPAM (cut into cubes) - I use 25% less sodium SPAM
4 eggs (beaten and seasoned with a little light soya sauce and white pepper) - 3 eggs to be scrambled  in step 2 below and 1 egg to be poured over
1 cup of frozen mix vegetables (defrosted)

Note about rice: I find that it is not necessary to use overnight rice as long as - you cook your rice earlier, make sure it cools down and add a little less water than what you will normally use to cook the rice. 

Seasoning for rice
1/2 packet of Japanese Seasoning and Soup Mix (see ingredients in picture below)
1-2 tsp light soya sauce
Dash of white pepper

Method:
  1. Heat wok or a large frying pan, add some light olive oil
  2. Pour egg mixture (about 3 egg portion) into pan and scramble it, dish out onto plate when cooked
  3. Next, fry cubed SPAM meat until it has browned nicely (no need to add oil if you are using a non stick pan as the meat itself will release its oils when it is being fried). Dish out onto plate when cooked
  4. Add about 1 TBSP light olive oil onto the wok/pan and add cooled cooked rice
  5. Add the seasoning for rice and start mixing the seasonings into the rice 
  6. At medium heat, fry the rice till the seasonings has been incorporated evenly
  7. Pour remaining uncooked egg mixture (about 1 egg portion) onto the rice and continue frying until the rice grains have been evenly coated with egg.
  8. Add mixed vegetables into rice and cook for another minute 
  9. Finally add the scrambled eggs and fried SPAM cubes into rice and mix well
  10. Taste the fried rice and add more light soya sauce if needed (be careful not to burn your tongue!)
  11. Dish out and serve, or put fried rice in rice cooker and set it to Keep Warm mode till it is ready to be served
I will recommend medium heat to be used when frying the rice so it doesn't get burnt easily.
