Daikon, Sweet Corn and Carrot Soup in thermal pot

Image
Today, I am making a Daikon, Sweet Corn and Carrot Soup using my good old Tiger thermal pot. I have been using this thermal pot for 6 years now and it has been such an energy saving device! Being a Cantonese, I love my soups to be boiled for at least 2-3 hours for maximum flavour and with a thermal pot, I simply let the soup boil for 45min to an hour on the stove, then transfer it to continue cooking in its own heat for another half 4-5 hours. Kind of a Chinese style of sous vide, except that it uses its own residual heat instead of gas or electricity! Whoever invented this technology is a genius! For the busy working person, you can make this soup at night, it will keep warm overnight. Reheat in the morning and keep it in the thermal pot. When you get home from work, reheat again and you can enjoy a delicious and nutritious bowl of soup. I use this method to cook my stewed mushrooms with chicken feet and the flavor is simply awesome!! Stay tuned for that recipe =) If y...

Double Boiled Soup - Organic Black Bean Soup

Image
Black beans have a variety of health benefits. It is good for maintaining healthy bones, lowers blood pressure, helps to support heart health due to the fiber, potassium, folate, vitamin B6, and lack of cholesterol contents in the bean. Black beans aid in digestion due to its high fiber content, which in turn also helps in weight loss.  Today's recipe is a double boiled soup that uses organic black beans. Why organic? Simply because there is no soaking of the bean required before you use it, and it apparently softens easily compared to the non organic beans. I am not sure if this is true, as I have only used organic black beans for this soup.  This soup tastes very pleasant, despite the scary looking black colour. And it is so nutritious and good for our bodies! Do give it a try! Double Boiled Organic Black Bean Soup (Serves 4) Ingredients: 1/2 cup of organic black beans 3 red dates (pitted) 10-12 medium sized dried scallops 200g pork ribs 1 ...

Miso Soup With Vegetables

Image
I love making miso soup because it can be done in a jiffy. Apart from the commonly served tofu and seaweed version, a few additions of what you have in your fridge can make it a lot more tasty and wholesome. There are so many ingredients you can add to miso soup - salmon, clam meat, little cubes of chicken thigh marinated with sake and a little salt, carrots, daikon (radish), mushrooms, tofu just to name a few. 2 weeks ago, I learnt a very interesting combination of pork belly, carrots, burdock root, yam and konjac at a Japanese cooking class. It was certainly OIISHII! This recipe is very versatile, you can try different combinations of meat and vegetables. Or go meatless, like this! :) Miso Soup with Vegetables (serves 4) Ingredients: 1 litre of water 1 packet of dashi stock powder (see below image for reference) 1-2 tablespoons of white miso paste 1 small potato (washed, peeled, cut into quarters and then slice thinly) 1 small carrot (washed, peeled, cut into half ...

According to Traditional Chinese Medicine (TCM), Cordyceps is believed to have a variety of benefits to our body when consumed such as increasing our immunity, having anti-aging effects, fighting respiratory infections, and improving liver function. For those who do not know what Cordyceps is, you can read up more about it and its benefits here ( More About Cordyceps ).  Was blessed by my in-laws with some cordyceps which sat in my freezer for the longest time, because I had no idea how to cook it. Thankfully, I had my 2nd aunt to the rescue who taught me what to do and for those who will like to cook a nutritious double boiled cordyceps soup for yourself and your family, but are unsure of how to do it, here is a simple 3 ingredient method to start off with. Just 3 ingredients: Chicken, Wolfberries and Cordyceps Double Boiled Cordyceps Soup (serves 4) Ingredients: 1 deskinned chicken breast 12-20 cordyceps (wash away the dirt from the cordyceps gentl...
