Minced Meat and Potato Stir Fry


This is a simple comfort food. I love scooping spoonfuls of this dish and eating it with rice. Since I had 2 potatoes in the kitchen left over from making ABC soup more than a week ago, decided to make this dish with the frozen mince I had in the freezer for dinner tonight. This is so simple to make, and yet so yummy!

My 2 boys love the idea of sampling food that has just been cooked, so when I asked them, "Who wants to test taste??" Both came immediately to the kitchen with open mouths and gave me thumbs up after taking a small mouthful each!! =)

This recipe is adapted from Guai Shu Shu. The sauce ingredients remain the same, except that I omitted the corn starch as I had added it in a previous attempt and the dish was way too starchy!

Minced meat & potato stir fry
(serves 5)

Ingredients:

200-300g minced meat
2 large potatoes (peeled and cut into cubes)

For the sauce (mix all into a small bowl)
2 TBSP dark soya sauce
2 TBSP oyster sauce
1 TBSP sugar
4-5 TBSP water (add more water if you like more gravy)

Method:

  1. Heat oil in a frying pan. When oil has been heated, add in cubed potatoes and fry till it turns a little golden
  2. Remove potatoes when done into a plate. 
  3. Add minced meat to pan and fry, breaking up the meat with your spatula
  4. At this point, I added in a teaspoon each of cooking sake and mirin to remove the meaty smell from the minced pork. This is optional.
  5. When meat is almost cooked, add in the sauce ingredients and mix well. Add in potatoes and mix well with the meat and sauce. Simmer at lowest heat for another 3-5min so potatoes will soften more.
  6. Dish out hot and serve with a plate of fluffy steamed rice or piping hot congee!

Pan fry potato cubes till it turns a little golden

Add in minced meat when potatoes are done. You can chop minced meat with  the back of a knife or use a meat tenderiser for more tender minced meat. I was too lazy to do so.

Break meat up into smaller pieces

Mix everything well with the sauce
