Minced Meat and Potato Stir Fry
My 2 boys love the idea of sampling food that has just been cooked, so when I asked them, "Who wants to test taste??" Both came immediately to the kitchen with open mouths and gave me thumbs up after taking a small mouthful each!! =)
This recipe is adapted from Guai Shu Shu. The sauce ingredients remain the same, except that I omitted the corn starch as I had added it in a previous attempt and the dish was way too starchy!
Minced meat & potato stir fry
(serves 5)
Ingredients:
200-300g minced meat
2 large potatoes (peeled and cut into cubes)
For the sauce (mix all into a small bowl)
2 TBSP dark soya sauce
2 TBSP oyster sauce
1 TBSP sugar
4-5 TBSP water (add more water if you like more gravy)
Method:
- Heat oil in a frying pan. When oil has been heated, add in cubed potatoes and fry till it turns a little golden
- Remove potatoes when done into a plate.
- Add minced meat to pan and fry, breaking up the meat with your spatula
- At this point, I added in a teaspoon each of cooking sake and mirin to remove the meaty smell from the minced pork. This is optional.
- When meat is almost cooked, add in the sauce ingredients and mix well. Add in potatoes and mix well with the meat and sauce. Simmer at lowest heat for another 3-5min so potatoes will soften more.
- Dish out hot and serve with a plate of fluffy steamed rice or piping hot congee!
