Pork Soboro Donburi

While looking for some chicken drumsticks to cook ABC soup for my boys who fell sick on Monday, I saw some Kurobuta minced meat on offer, buy 1 get 1 free! I am a sucker for such sales, and the meat looked so good I just had to try it, and think about how to cook it later.

Kurobuta is like a pork version of wagyu beef. If it is on offer, just grab right?

So, I started to look for recipes online and found Chicken Soboro Donburi (Recipe Here). I made some changes to suit what I had in the fridge but the seasoning for the meat remains unchanged.

When cooking the meat, my older boy kept saying: "Mmmm, what's that smell?" He couldn't wait to start dinner, and polished off every bit of rice in his bowl. :) Another new found recipe for keeps, which I just have to share with you.

One dish meal
Pork Soboro Donburi (Serves 4)

Ingredients:

225g ground pork (you can use ground chicken too)
1 Tbsp sugar
2 Tbsp soy sauce
1 Tbsp mirin
1 Tbsp sake

3 eggs
A little soya sauce

Salted endamame which is a boiled green soy bean - I use frozen ready to eat ones. Take out the amount you want, put it into a bowl and add hot water to defrost, cover bowl with a plate. When done, shell the endamame and set aside while you cook the eggs and meat). You can substitute it with any vegetable you like such as carrot and cucumber strips or diced tomatoes as long as it has good colour contrast to make the dish look more appealing! ;)

Cooked rice - Japanese rice is the preferred choice for this dish if you have it in the kitchen, I used a mix of white and brown rice.

Method:
  1. Beat eggs in a bowl with a little soya sauce for taste. 
  2. Heat up frying pan with a little oil, and scramble the eggs. Keep stirring and breaking it up into small pieces to resemble the size of mince meat. When done, remove eggs from pan and put into a bowl or plate.
  3. Wipe the pan used for eggs with a kitchen towel to remove any remaining egg bits. Heat up frying pan with a little oil, put in ground pork (or chicken) and break it up. Pour sake onto meat and let the alcohol evaporate (about a minute).
  4. Put remaining seasonings (mirin, soya sauce and sugar) onto meat and fry till cooked. Make sure seasonings coat the meat well. Put meat into a bowl or plate
  5. Spoon rice into 4 bowls 
  6. Put a single line of endamame onto the center of the rice.
  7. Spoon eggs and meat onto each side of the rice, and serve.
