Rice Cooker One Dish Meal - Cabbage Rice



When I am pressed for time, making a one dish meal is the best option for me. This cabbage rice recipe requires frying of the ingredients, before putting everything into the rice cooker to cook. I then go off to do the chauffeuring duties while the rice cooks away. When we get back home, we are greeted with the delicious smell of cabbage rice the moment we open the door and step into the house. Mmmmmm!

And voila, we have a savoury and piping hot dish of rice that is full of protein and vitamins, great for the old and young.

Another plus point to this dish is that because the family dines at different times, with the Hubby coming back later, the rice can be kept warm in the rice cooker until he eats.

I used the recipe from Domestic Goddess Cabbage Rice and adapted to what I had in the fridge, this time with leftover roast pork belly.

Cabbage Rice in Rice Cooker (serves 5)

Ingredients

300g roasted pork belly (sliced thinly)
1 small cabbage (round and cut into big strips)
Handful of dried shrimps (softened in a small bowl of water)
1 lup cheong (chinese sausage, deskinned and cut into thin slices)
3 cups of washed rice
2 3/4 cups of water (use less water as the cabbage will release its moisture when cooked)

Seasonings
2 teaspoon dark soya sauce
2 teaspoons light soya sauce
1 teaspoon chicken powder (optional, but if you have it, add it in as it gives a lot more flavor to the rice)
Dash of white pepper

Method:
  1. Wash 3 cups of rice and drain well. Put washed rice and 2 3/4 cups of water into the rice cooker, set aside
  2. Heat up a big frying pan or wok with a little olive oil
  3. Add in the softened dried shrimps and fry till fragrant, you can see the oil bubbling gently around the shrimps.
  4. Then add in the thinly sliced roasted pork belly and fry till it is lightly browned
  5. Add in the slices of lup cheong (chinese sausage) and cook for another minute.
  6. Finally, add in cut cabbage, and seasonings. Stir well, but do not overcook, just enough to coat all the ingredients with the seasoning. The cabbage will continue to cook in the rice cooker later.
  7. Turn off heat, and place the stir fried ingredients on top of the rice. 
  8. Cook your rice in rice cooker as per normal and when the rice has been cooked, mix the rice and ingredients well.
Serve hot with garnishing such as fried shallots or thin strips of omelette.
