Red Velvet Cheesecake Brownie
Fancy some Red Velvet Brownie Cheesecake for afternoon tea? You can make it yourself with this very yummy recipe, which I have tried and tested. It sounds like such a decadent and sinful cake, but in reality, it is a moist and cake like brownie which is so light. The cheesecake is not heavy and is a great compliment to the chocolatey brownie. Best of all, it is not too sweet! You might just find yourself cutting pieces of it and popping them in your mouth, and it will all be gone too soon!
As a mom with 2 growing boys and having to pack school snacks for them everyday, this is a great addition to the snack box. And also a welcome change to the fruits or plain biscuits/cereal that they normally get.

Some baking tips to share:
- If you like a pretty swirl, it's advised that you put smaller dollops of brownie batter. As you can see in my picture, my dollops were quite big because I was lazy =p I find that putting the reserved brownie batter in a piping bag and piping it into the cheesecake is much neater and helps to get u a better looking swirl (I have done this in my past bakes). If you do not have piping bags, do not fret. Simply put the brownie batter in a small plastic (food grade of course!) or ziploc bag and snip a small hole at the corner.
- I wasn't keen on adding too much food colouring, so I simply used a few drops of red gel paste to get a tinge of reddish brown. You can leave out colouring if you do not like it. It will not affect the taste or texture of the cake.
- Using a good premium cocoa powder although not essential, does make a difference to the brownie, and any chocolate good you are making. What is considered a premium chocolate? Valrhona comes to mind and if you are curious, I use Belcolade (my favourite!) and Ghirardelli chocolate in my bakes. The smell of a baked good that uses premium chocolate is absolutely divine!
