It's been a while... And a new recipe on the Thermomix - Mee Hailam

2019 has been a year of many changes. My 2 boys have started new schools, with both reaching their individual milestones - Primary 1 and Secondary 1. I have also started my online bakery, so it has been a pretty life changing process indeed. Work for me now starts from 5am till the boys go to bed, with chores, mommy duties and baking!

Cooking meals at home is still something that I do, but mainly the same old dishes so I haven't been posting too. In addition, my wonderful hubby bought me a super kitchen assistant, a Thermomix!! Dinner meals now consist of at least 2 dishes prepared by my TM and I get my recipes from the TM cookbooks or online. Even the rice cooker is now kept in the storeroom as I use the TM to cook rice. Although I post some of my regular TM dishes on my Facebook page, it may also be a good idea to share them on this blog.

Having checked into this blog after the long absence, I was amazed to see that I still have regular views. Wow! Thanks so much for viewing my recipes, this is such an amazement to me. And the most popular post is the Double Boiled Tian Qi with close to 2000 views! Really, I did not expect that anyone will actually read my posts on this blog, which I started when I had some free time on my hands and wanted to keep myself busy. It was also a good way for me to record my recipes, and use it whenever I wanted to cook a particular dish.

Today I am sharing this one dish meal which I made using the Thermomix 5 - Mee Hailam. I hardly cook lunch as it is such a hassle to cook 2 meals a day plus washing up. With the TM, making one dish meals like fried noodles, beehoon or porridge has really helped me to get started on cooking lunch. Pasta is also a hot favourite with the boys which I love to do as it has also become really easy with the machine taking over the boiling and stirring functions, with no worries of hot water spilling over the pot.


Mee Hailam (TM recipe from the Malay Kitchen cookbook)

Ingredients:
3 garlic cloves (peeled)
40g shallots (peeled)
1-2 bird eye chillies (I omitted this for a non spicy version)
30g cooking oil
250g water
70g light soya sauce (I reduced to 50g)
5g dark soya sauce
1/4 tsp white pepper
200g baby bok Choy (cut)
200g medium sized prawns (deshelled and deveined)
500g fresh yellow noodles (chilled noodles do not work as well for TM noodle recipes)
100g fish cake (sliced thinly)

Method:

  1. Place garlic cloves, shallots and bird eye chillies into mixing bowl. Chop 5 sec/sp5. Scrape down sides of bowl with spatula
  2. Add cooking oil. Saute 4min/120deg/sp1
  3. Add water, light and dark soya sauces, white pepper. Cook 4 min/100deg/sp1
  4. Add the baby bok Choy, prawns, yellow noodles and fish cakes (in that order). Cook 3min/100deg/rev/sp spoon. Let stand 2 min before serving or keep warm in a pot with lid
And there we go. A one dish meal, great for breakfast, lunch or dinner with a total cooking time of less than 15 min! How awesome is that, and no oil splatter or having to fry the noodles with a cooking spade over the fire! I simply love my thermie! :)
